Recipe: Creamy Asian Chicken Noodle Soup
My husband and I discovered the BEST twist on chicken noodle soup, so I’m sharing it with you in case you need a new recipe for the new year.
This recipe is from Delish, and it’s a decently easy one to pull together after a work day. Our kids don’t eat it because they’re on a strict diet of chicken nuggets and corn dogs…but that just means more for me! The best part of this recipe is that there are always lots of yummy leftovers that prevent me from cooking two nights in a row!
Here are a few of our modifications…feel free to adopt them as your own!
Add more onion and garlic than it calls for
Add only one bell pepper
Slice carrots into discs rather than long slices
Use two cans of coconut milk, BUT one light and one regular
Use the whole rotisserie chicken (minus the legs…a kid will eat that)
Use cilantro if you have it, bail on it if you don’t
We haven’t tried the recommended lime
