Recipe: Quick and Easy Christmas Cookies
We used this snickerdoodle cookie recipe for the kids’ cookie exchange, and they were so tasty we made them for our grown up Christmas party! They were a hit! Several people asked for the recipe, so we’re sharing it here.
Ingredients:
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
2 3/4 cups all-purpose flour
1 1/2 teaspoons cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt
For cinnamon coating:
1/4 cup granulated sugar
1 tablespoon ground cinnamon
Instructions:
1. Preheat the Oven: Preheat your oven to 350°F. Line baking sheets with parchment paper for easy cleanup.
2. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and 1 1/2 cups of granulated sugar.
3. Add Eggs: Beat in the eggs.
4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, cream of tartar, baking soda and salt.
5. Mix Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
6. Prepare Cinnamon Sugar Coating: In a small bowl, combine 1/4 cup granulated sugar and ground cinnamon. Mix well.
7. Roll the Dough: Shape the dough into 1-inch balls and roll them in the cinnamon sugar mixture until evenly coated.
8. Bake to Perfection: Place the coated dough balls onto the prepared baking sheets, leaving some space between each. Bake for 10-12 minutes or until the edges are lightly golden.
9. Cool and Enjoy! Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
